The easiest “don’t make me cook again” Boxing Day recipe : Sticky Spiced Chicken Wings with Mango Slaw

The best earliest culinary Christmas present ever! The whole family helped to prepare this meal – mainly because it was absurdly fun using the Finamill – even my teenage son stopped his one eyebrowed sneer to join in the button pressing ceramic grinding magic! Each family member insisted on swapping pods simply to click them on and off with ease and a giggle of joy so these chicken wings were seriously spiced and utterly delicious.

We played with the Finamill for longer than the actual meal took to prepare! So much fun and so incredibly simple. Individual grinding pots to keep the flavours distinct with one hardy can even grind coffee beans pod (the FinaPod Max) and two FinaPod Pro Plus for everyday spices all tucked neatly into a little tray of joy.

Sticky Spiced Chicken Wings with Mango Slaw

Beautifully ground fennel, cumin and coriander seeds with black and pink peppercorns and rock salt with lashings of honey
Ingredients

For the Wings:

Finamill:


Black peppercorns and pink pepper corns together in the FinaPod Max

Fennel, cumin and coriander seeds in the FinaPod Pro (one teaspoon of each)

Rock salt in the 2nd FinaPod Pro

Chicken wings (800g-1kg)

Olive Oil

Honey

For the Slaw:

1/4 of a Red cabbage thinly sliced
1/2 a fresh Mango sliced into small chunks
1/2 a bunch of Fresh coriander
The juice of one Orange
Extra Virgin Olive oil and Salt and pepper

Method

Pop a teaspoon of each spice into the Finamill pods.

Drizzle olive oil all over the Chicken wings then grind the spices onto the wings and rub it all together. (I snip my wings so you have the wing and the knuckle).

Pop into the top aga for 40 minutes or a preheated regular oven at 200 degrees for 40 minutes then take them out and drizzle with a couple of tablespoons of honey. Return to the aga oven for a further 20 minutes.

Whilst this is cooking, thinly slice a quarter of the red cabbage, half the mango and plenty of fresh coriander…dress with olive oil and orange juice and salt and pepper.

Serve together for a light supper or as a party side dish. So simple and so joyous with the easiest Finamill grinder.
