Velvet Rose Wool Blanket

The best thing about this soup is it’s all bunged in the pan together and the oven does all the hard work, it’s rich, creamy, lightly spiced and so moreish. My husband called this “the best soup he’s ever tasted”…here’s the recipe:


2 large sweet potatoes chopped into 1 inch peices

1 white onion chopped

2 carrots chopped the same as the sweet potatoes

1 clove garlic

1 thumbsized peace fresh ginger roughly chopped

5 teaspoons medium curry powder

2 teaspoons ground cumin

1 tin coconut milk

500ml Chicken stock

Fresh coriander

Spring onion

Natural Yogurt

1 flatbread

Olive oil

Preheat the oven to 180

Put the sweet potato, onion, carrot, garlic and ginger into a large cast iron oven proof pan. Add the salt, pepper, cumin, curry powder, and a drizzle of olive oil. Thoroughly coat all the veg in the oil and spices.

Put the lid on and cook in the oven for 40 minutes or until the sweet potato is soft and mashable.

Place the pan on the stove top, over a low heat, and add the chicken stock, coconut milk and half the coriander.

Using a stick blender, blitz the soup until smooth being mindful to blend the chunks of ginger (they don’t soften in the oven very well so need a good blitz).

Ladle the soup into bowls, and top with a dollop of yogurt, chopped spring onion and more fresh coriander.
