New Simple Winter Supper Series

With Rose from Mum On Muddy Lane

Please welcome my lovely friend Rose who creates the most delicious recipes from her cosy cottage in Cornwall. Over the next few weeks, Rose will be whipping up a variety of delicious simple winter warmer suppers, perfect for easy entertaining over the festive period or just snuggling up by the fire.

Rose and I met on Instagram sharing our cottage homes, our love of good food, our absurd senses of humour and our previous incarnations as actresses. Rose has the most hilarious bonkers sense of humour that makes you cry silly tears of joy, from wrapping a tea towel over her hair to become an olden day Cornish inn keeper (inspired by her recent purchase of a vintage enamel candlestick), to her “chats” with her useless agent (also played by Rose) discussing the next food festival to creating really delicious easy recipes on her cottage Aga.

From an acting dynasty, Rose followed in her family’s board treading footsteps (her Father was the late great childhood hero of mine Brian Cant, her Aunt is another National Treasure – Fern Britton as well as Grandfather Tony Britton, Uncle Jasper Britton and actor brother Richard Cant) when Rose had children, she stepped away from the stage to bring up her young family which allowed her to spend more time revisiting her love of cooking.

I started cooking as a child, I jut always loved it. When I was a teenager and Dad fell ill, I found myself wanting to make him better with nourishing meals. It brought my Dad so much joy, he would call my meals “miracle meals” as, he’d say, I’d pull them out of nowhere.


I guess knowing the joy my cooking bought people, made me enjoy it more. And so, from my teens on I haven’t spent a day away from the stove really. Even at drama school I would cook up huge roast dinners on a budget, and invite all the students round and charge £2 a head.


Cooking to me is therapy. An art form, a place to channel my creativity. When I had my children, I gave up a lot of my creative outlets like acting and voiceover and art. As so many have to when they have young children, you have to sacrifice some parts of yourself in aid to be the best parent you can be. But cooking was a way for me to still create and bring joy to people.

Rose bought a quaint little pink ice cream from which she would sell her creations to thousands of people each summer in Cornwall. Winters were spent cooking wholesome meals by the Aga and now that her children are a little older, she has been able to revisit her love of cooking and performing, by starting Mum on Muddy Lane.


Mum on Muddy Lane is a visual blog documenting Rose’s cooking and cosy Cornish lifestyle through humour, voice over and a passion for cornish produce.


I love that what I do helps other people find their confidence in the kitchen. It shows them that you don’t have to be a chef, or cook fancy things and stress out, to put delicious wholesome impressive meals on the table.

Mum on Muddy Lane’s first Simple Winter Supper is:

Creamy white wine, chorizo and Leek Spaghetti

Ingredients: serves 2

• 200g spaghetti

• 75g chorizo chopped into 1cm size bits

• 1/2 leek, white and light green parts, thinly sliced into ribbons

• 50ml double cream

• 125ml white wine

• 1 lemon. The juice and half the zest.

• 100g grated Parmesan cheese

• Salt and black pepper to taste

• Fresh Parsley to garnish if you like

 

 

Instructions:

1. Cook the spaghetti in a large pot of boiling salted water according to the package instructions until al dente. Reserve about 1 cup of pasta cooking water before draining.

2. While the pasta is cooking, heat a pan over medium heat. Add the chorizo and cook until it’s slightly crispy and has released its oils. Add a little olive oil if required.

3. Add the sliced leek to the pan, with chorizo and sauté until the leek is softened and has absorbed some of the chorizo flavours. This should take about 5 minutes.

4. Add the white wine to the chorizo and leek and cook off the alcohol for a few minutes on high, then add ¾ of the parmesan cheese and the cream.

5. Squeeze in the juice of 1 lemon and the zest of half the lemon.

6. Once the pasta is cooked, drain it and immediately and toss it in the pan with the chorizo mixture.

7. Add a splash of the pasta water, and toss vigorously, until you have a creamy glossy sauce that clings to the spaghetti.

9. Serve immediately

8. Add plenty of fresh black pepper and garnish with the rest of the Parmesan cheese, and if you have it, chopped parsley.

10. Enjoy with a good cold glass of Chenin Blanc.

I can confirm that it is utterly delicious and took barely any time to make. Win win!
