Granny’s teabread

The easiest and most deliciousest teabread recipe from Lilac Cottage Shop made with Earl Grey tea for the most delicious flavour.

I saw this recipe on Rosie’s Instagram account and had to make it immediately. Then three nights in a row I forgot to soak the dried fruits overnight so the immediacy was lost but not the intention. Finally, finally I remembered the soaking bit and my favourite new tea loaf was born.

Ingredients

170g of Sultanas

85g of Raisins

85g of Walnut pieces

450ml of Earl Grey tea

200g of Soft Brown Sugar

1 egg

280g of Self Raising Flour

Method

Soak the fruit and walnuts in the tea overnight

Stir in the sugar, egg and self raising flour and mix well.

Pour into a greased and lined loaf tin and pop into the Aga (remembering the blind bake cooking tray so the top doesn’t burn with the long bake…) or conventional oven at 150 degrees for 1 1/2 to 1 3/4 hours.

Cool for a few minutes in the tin before turning out and cooling on a rack.

So so simple and so delicious with a nice cup of tea, the perfect companion with which to await spring.
