Accidental Fat free Apple Cake

Yesterday I found a new recipe for apple cake from my friend Karen from Lavender and Lovage which is super quick and simple. I was running late and needed something speedy so thought I would try her fab recipe.
Unfortunately whilst discovering that not only was I running late but I had also run out of most of our soft brown sugar (thank you children), so I subbed in different sugars and in my haste forgot the butter! Yet it worked! The cake was delicious and my fruit hating son had four slices! This is a world record! I will pop the recipe below and add a link to Karen’s actual recipe underneath too!!!

Recipe for accidental fat free apple cake:
Ingredients
- 100g of golden caster sugar
- 100g Muscavado sugar
- 200g of self-raising flour
- 1 1/2 tsp ground mixed spice
- 4 free-range eggs, large and beaten
- 4 apples, cookers (app 400g), peeled, cored and diced
- Demerara sugar, for sprinkling over the top

Method
1
Preheat the oven to 180°C/gas mark 4 and butter and line a 7 inch (18cm) round cake tin (or 23cm if you are running late and can’t for the life of you find yours) Mix the ground mixed spice with the flour
2
Chuck all of the ingredients, except the apple, into a large bowl or food mixer and beat together for 2–3 minutes until well mixed. Add the 4 diced apples and stir into mix
3
Spoon the cake mixture into the prepared tin and and sprinkle some Demerara sugar over the top of the cake (I did this five minutes before the end of the bake so that the Aga didn’t burn it).
4
Bake in the oven for 55–60 minutes, or until a skewer inserted in the middle of the cake comes out clean
